The first time I held a conversation with John Clark was actually his last day with the company I’d been contracted for that day. Jon and Vinny’s, an elite food empire worshipped in Los Angeles, has a few different restaurants and caters a slew of upscale events. Being that I’m usually serving drinks, I have no business in the kitchen, so I’d seen John before, but we’d never spoken. This particular day, however, at the SAG-AFTRA building in Beverly Hills at some sort of fancy awards shindig, I got the chance to chat with him.
“Yeah, I’m going do my own thing.” That’s all I remember him saying in regards to him leaving Jon and Vinny’s. His thing could’ve been anything. I almost thought maybe he landed a decent acting role; we do live in L.A., afterall. He didn’t give any information at the time really. I suppose he’s more of the show-and-prove type. Well, a couple of years later, he’s definitely showing and proving.
John Clark’s Two Wings Chicken is doing a residency at Animal Restaurant on Fairfax Avenue in Los Angeles. This. Is. Huge! That address, 435 N Fairfax Ave, has an unending page of geotagged posts Instagram, having been graced by tourists and celebrities alike. And, that kitchen, has featured the talents of extremely established cuisiniers, such as one of the most famous of all American chefs, Thomas Keller.
And now, John Clark.
What I find rather impressive, somewhat moving, is that this is a company he left. Remember? I met him when he was working as a catering cook for Jon & Vinny’s, now he’s being featured (serving his own food, from his own company) at a Jon & Vinny’s location. That speaks volumes to the relationships he developed and maintained.
(How many of your old jobs would put you on? Big you up? Puh-leeze! … Okay, so it’s just mine that wouldn’t wiz on me if I were on fire? Cool. I digress.)
He put in the work.
According to an interview with Eater Los Angeles, John Clark’s relationship with Jon & Vinny’s began back in 2011 with him working at one of their locations for free. Yes, free, as in unpaid. Some years later, in 2015, he joined the opening team of Jon & Vinny’s on Fairfax as a line cook. From there, he began to pick up catering shifts with Jon & Vinny’s catering company, in addition to his regularly scheduled shifts at their restaurant.
